    I didnt like the cheese sauce that went on top of the fish. It may have been tasty on chicken, but cheese and fish don't go very well in my opinion. I did think that the stuffing mixture was tasty though...

    I'm usually wouldn't touch fish with a ten foot pole - but this was excellent!

    I used half milk, half cream, and only 8oz of cheese with no ill effects.

    I also cooked the rice separate and then served the fish and sauce over top of the rice.

    Even the super health conscious mom and picky junk food loving son enjoyed this dish!

    I used tilapia as the fish and it turned out great. The tilapia fillets were smaller then the flounder fillets that Alton used. To account for this I had to use a bunt pan instead of my 9x9 baking dish. I also extended my baking time about 8-10 minutes. I recommend this recipe for any cook!

    I made this recipe last night for my boyfriend and daughter. Both are not crazy about fish. To my dismay, they loved it! Serioulsy, there were so many compliments. The spinach, rice, and cheese complimented the founder perfectly. I didnt roll the fish. I used flounder (no skin. I smothered them with the spinach mixture then layered the remainder after the rice, placed the flouder over the spinach, and poured the cheese mixture. Delicious!

    The Flounder was too mushy.

    It gave me a great idea for spinach. I call it rice and spinach casserole. I had a little of the spinach stuffing left over and put it in a corner of the rice. I have always hated spinach but it tasted wonderful.

    I'm just going to put the spanish in ice cream scoop clumps on the rice and drown it in the wine/cream/cheese liquid.

    Quick, easy with minimal prep time and dishes. Don't be afraid of the salt in the cheese sauce, it really enhances the flavor. AB did it again.
