    I think some are faulting the recipe for having difficulty working with sugar. It is touchy, but not the recipes fault. This isn't the easiest recipe, but have made it many times and it is always great. Really the only way I want to eat a banana.

    I made Ina's caramel sauce twice and it did not turn out either time. I knew Alton wouldn't let me down. The caramel was perfect the first time and it was so easy. I did not wait long enough for the caramel to cool before making the doodads so they were not a continuous stream. I couldn't make them fast enough to keep up with my husband eating them though. I did not do his banana recipe. Instead I placed bananas and chocolate chips in phyllo dough and then used the caramel sauce and doodads as topping. It was delicious. I could have done his bananas but did not have a torch.

    This was a fun science experiment, but the final results weren't that great. My doodads tasted burnt and the sauce . . . well, I've tasted better. The 10 minute cooking time was way off as well. It took me about 40 minutes total.

    i whipped up a quick banana brulee (sans caramel sauce for my mother who had arrived home from a bad day at work. i halved the banana, topped with sugar, applied flame and added a scoop of vanilla ice cream betwixt said banana halves and topped with the home made cocoa syrup (from the art of darkness II and it brightened up her day.

    another winner by my man, AB.
