    I shelled out the big bucks and bought the Villaware iron that Alton uses in the episode and the waffles come out great. I got my iron on Amazon.com for $44.95. Not the cheapest iron, but far from the most expensive and we will definitely get our money's worth. In response to Lynne (see below... Your waffles could have been doughy because you either over mixed the batter or didn't let them cook long enough. I know you say you have been making waffles forever, but to err is human.

    No more box mix for me-- this was delicious! I used nonfat milk (because it was all I had on hand and I don't think they even suffered that much. Delicious.

    I am so thankful I found this recipe. I've been wanting to make waffles from the scratch since everything is getting to be expensive. This is pretty good. Thanks Alton!

    These waffles are great! Made multiple batches and put them in the freezer and they tasted even better the next day in the toaster! Very filling too. I will only make these waffles from now on and will never buy frozen prepackaged waffles again.

    Great flavor and texture, especially with an added 1 tsp of vanilla to the wet ingredients. My only complaint was that the waffles were a little soft, particularly the ones that I left warming in the oven. I didn't turn my iron to it's highest setting though (i usually leave it at a 5/7, so next time I'll try that. Overall I thought it was as fluffy as waffles I've made by beating the egg white seperatly. Also I only had AP flour, and still turned out great.

    Best waffle recipe I've ever tried, best waffles I've ever had. They were even that awesome when frozen and reheated. Highly recommended. 100x better than any other frozen brand, trust me I've tried them all. The only variation I did was add chocolate chips, that's all. I can't even count the number of times I've made this recipe, without fail. Alton really outdid himself with these waffles.

    These are so good and easy to make, I will never buy frozen waffles again! I pop leftovers in the freezer and reheat them for a quick breakfast all week. These waffles are crispy, light, and delicious.

    To Bryan (see comment below:
    Your waffles probably deflated because oat flour doesn't have the same protein content of wheat (whole and All Purpose flours. It's the protein that give waffles structure, allowing them to keep their shape. Replacing them with a lower protein flour will cause them to deflate like you described.
