This is one of the easiest receipes I have ever seen for excellent jerky. Never knew that a box fan could be used for jerky. Much more cost effective than the energy sucking/expensive dehydrators. Thank you for the tips. Watch you at least every other night. Keep up the good work.

I recently tried this recipe with the usual waryness I have had with jerky recipes due to many disappointments but was very pleased with the results. The only part of the recipe I altered was reducing the amount of ground pepper by one teaspoon as I worried about this recipe being in the popular "extreme peppering" catagory. It was a good decision. The beef I used was Rancher's Reserve (Vons London Broil and I meticulously trimmed off most of the fat. After marinating the sliced beef overnight (but drained the excess liquid from the bag after 6 hrs I decided to pound each slice for tenderness and faster, more even drying. Another good decision. I used a Nesco American Harvest dehydrator which has the fan on top as opposed to many that are located on the top. The drying time was about 5 hours.
Great recipe-- try it next time there's a sale on London Broil (I got mine for $1.78 a pd.

Fan idea was brilliant and original. With only a slight improvement, I have used this idea 2 times.

I was curious about this particular recipe and method, but my wife was the one that really wanted to try this one. It's easily the best jerky I've ever had, and everyone who's tried it loves it. I would recommend this to anyone who has that little scientist inside them.

I used the brine, but instead of using the fan method I used a commercial dehydrator. It's pretty tasty!

This made some very good beef jerky. It didn't last too long.

I ended up getting a dehydrator, rather than doing the filter idea.
