    The vinaigrette can also be used on hot, cooked beets. Include the lemon juice in the vinaigrette. Excellent!

    To address the review titled 'A Little Snobby Alton...', if you search on 'spiral vegetable slicer' rather than 'rouet', you'll fin other slicers that are not in the 3-digit price range. There's even one at Walmart.com for just under $40.

    Having said that, for those who don't want to buy what appears to be a 'unitasker', simply julienne the slices of vegetables (very easily done with a cheap-o V-slicer. They won't be curly, but they will be finely cut.

    Sorry Alton, but most of your followers will probably NOT go to Amazon or anywhere else to buy a spiral food ribbon slicer. Great tool but to specialized and too expensive for most of us I'm afraid. You are usually so good about explaining things. Maybe you did in your episode.

    Be prepared for the boiling of the beets to take awhile...
    Also, no clue what a rouet is or how to find
    out what it is.... Guessing that it shreds/finely
    slices the veggies.? Wish he had listed how
    thin it be if gadget was unavailable!

    I made this recipe on a weeknight, thinking that the prep would take some time, but was still surprised at how long it took to break down the ingredients. The listed recipe makes a huge amount of slaw, so I cut it in half. Great flavor and texture! I will definitely make this again for a potluck or picnic.

    I was looking for a way to eat more beets. I like pickled beets but this was much tastier and fresher. I only used the beets, not the other vegetables.

    Great flavors in this recipe. Wish I could find a rouet! Is it the same as a Benriner turning slicer that Emeril sometimes uses?
