    This was indeed the best green bean casserole I ever had. Hands down. Not even close. Perfectly-balanced flavors and textures.

    The only difficulty I had was with the onions. I wasn't really pleased with the results done in the oven on a baking sheet -- some burned, some under-cooked -- and I don't think the recipe calls for enough breading mixture. The second time I made the dish I pan-fried the onions and was happier with the results -- though the third time around I will at least double the breading.

    WOW! This recipe is FANTASTIC! I made it for Thanksgiving and Christmas and everyone LOVED it!! I saved time and used the canned fried onions. DELICIOUS!!!

    And to the poster that says everyone of Alton's recipe's is a flop, the problem must not be with the recipes.

    Try cooking onions in 450 degree oven for 30 minutes without burning them...not possible (at least in my oven. I had to dump my first attempt and try again at 350 for 15 minutes (turning once. Much better. Recipe was great otherwise - fantastic healthy alternative to those artificial canned "fried" onions.

    My new son-in-law spent Christmas with us, and I was bound and determined to make sure that there were some familiar dishes on the menu. My daughter said he loves "casseroles". Further clarification exposed his weakness for innumerable casseroles, including "green bean". Since we are a "from scratch" family, we had to find an alternative to the campbell's soup version. (We have to admit to cheating on the onions--we bought French's This was OUTSTANDING! We loved it! And, since we are also a low-fat family, we will experiment with lightening the sauce (and reducing the salt next time. The fresh green beans and mushrooms MADE this dish! Thank you Alton Brown!

    Delicious and easy to make. I might try a little heavy cream instead of 1/2 & 1/2 next time.

    12-inch cast iron skillet worked great for me...

    This really is the best ever. I have never been a fan of most green bean casseroles..too salty or too mushy or too cheesy etc. This one has a nice sauce that was neither too thick or too thin. Fresh ingredients are best of course. Everyone loved it. Only change I made was to use more beans and mushrooms and a glass casserole.

    I was quite surprised. A very very good dish and my guests all loved it as well - especially compared to the fat-laden "traditional" version using canned soup and canned onion rings. I followed this pretty much to a TEE, using a full pound of green beans. My comments/adjustments for NEXT time:

    Don't slice the onion rings TOO thin - they will absolutely burn, both on initial cooking and after topping the beans.

    Process the Panko crumbs in a food processor just so they'll be more fine and stick to the onions.

    Do NOT use a Cast Iron skillet - it makes a total mess of it. Cook everything in a skillet and transfer the beans et al to a casserole dish, then top with the (pre-cooked onions.

    Put a piece of alum. foil over the casserole if the onions look to start to burn.

    Yummy dish !! I will definitely do this again.

    The been and mushroom mix was awesome. I halved the nutmeg. I didn't have much luck with the onions as others had mentioned. I used parchment paper no spray. Some were burnt and some were soft and i mixed them as instructed.

    Alton, I love you and love your show(s, but your recipes are disasters! Not one I have tried have wowrked out and this is no exception. Your video of toasting the onions looked so lovely...
    I thought it seemed odd not to have a liquid on the onion rings before adding to the coating and sure enough, the dry ingredients just fell off, burned in the bottom of the baking sheet and the onions were awful. I followed the recipe from the video exactly. I don't think you test your recipes before posting them or something since this is not a one time experience. Very disappointing to now have a failure for Christmas dinner...

    I made this dish for thanksgiving and it came out so delicious! I'm very happy with it and i intend on using it for future Thanksgivings and Christmas : Very Satisfied
