This recipe is so full of flavor! I have made this a few times and love the sauce and beans but have had issues with the onions. I am sure AB wouldn't be impressed with this but I made this recipe and instead of making the onions I used the Durkee onions and it was awesome. I am going to keep trying the onions but was running short on time.

I Love this recipe for green bean casserole it also made me love a casserole that I grew to hate as an adult. When I first made it I was not to happy about how it turn out for one it was to salty and the other I had problem with the onions coming out burnt and not the way I saw on the show. Over the years I have been working on and making improvements and the first one I did was that when I cooked the bean in the boiling water is I did not add salt to the boiling water. By doing this it cut done on the salt and improved the over all flavor. The other was trying to make the onions to where they did not burn I did try cooking them at a lower temp and that did not work. I also refused to used store bought one that came out of a can. So I thought about deep fried. So I use the flour and bread mixture from this recipe and I also soaked the onions for about an hour in buttermilk and then dipped in the flour mixture and deep fried them.

this was a total disaster, at least for me. Onions came out OK, but after mixing them in with the beans and other stuff, all the breading came off, and the sauce was lumpy and murky and sort of separated. It was embarassing to serve it to my guests. Because of so many other great reviews, I can only assume I messed up somehow, though I followed the recipe to the letter

This recipe is a hassle, but TOTALLY worth it!!! I am a newbie when it comes to cooking, and I was a little hesitant to try this recipe, but I am so glad I did- even though I had to quadruple the recipe.

Two pieces of advice before you begin: 1 watch the video, it helps, and 2 don't slice the onions as thinly as Alton does. I think the super thin onions are why many people have commented that they burned. I thought I had made a huge mistake and was messing up my dish because I couldn't get my onions thin enough. But, what I discovered, was that this helped them from becoming over-done.

PS: Everyone LOVED the dish! I have been asked to make it at two different Christmas events, and have also been asked to be the official "Green-Bean-Casserole-Maker" for all future Thanksgivings.

I substituted a moderate portion of French's onions for the baked onions (based on poor results my last try and let the green bean mixture be the star. I used a mixture of baby bella and shitake for a variation, and was pleased by the flavor. The nutmeg does have a dominating flavor, so I would either use fresh grated if you love nutmeg, or dial it back if you don't. I have tried it both ways and prefer the nutmeg cut in half. I also cook fresh beans until they are soft, as I like soft better than al dente for a casserole.

Absolutely Loved this recepie, it was a perfect addition to our thanksgiving dinner. Came out delicious! The onions are a little tricky, but it's worth the extra effort.
