    This has become the family favorite. It is incredibly easy to make and my 2 1/2 year old twins LOVE it. To make it a full meal, I skin & chop up some rotisserie chicken and add red/yellow/orange sweet peppers to the deal. Everyone who eats this at my house asks for the recipe. Also, sometimes I switch up the cheese to whatever is handy in the fridge. Thanks for this versatile dinner delight.

    I intended to halve this recipe (I only had 3 cups broccoli, but when it came to adding the eggs I spaced it and added the 2 eggs called for, not 1. It was absolutely fantastic, rich and custardy, almost remenicent of a savory bread pudding. It cut and stood up beautifully in thick squares on the plate. It could definitly be a main course for a lite dinner or brunch. I don't know if I will ever be able to make the recipe as its supposed to be. So my advice - double the eggs. Oh, and if you don't add the ramen noodles its pretty carb free.

    I used fat free yogurt, reduced fat cheddar, light mayo, and light blue cheese dressing. I omitted the noodles because they're fried and full of fat, but I used the flavor packet. The casserole was nevertheless creamy, flavorful, and moist.

    Very ease to make and tastes great. We take meals to people that home bound and this is a perfect dish that can be heated up in the microwave easily. I have also added some cream of chicken soup and left over chicken and turkey.

    While exhaustively searching the internet for a broccoli casserole that does not contain canned soup (ugh, this little recipe seemd so odd, I just had to try it. Glad I did! It's simply delicious. It was easy, my five year old loved it, and my comfort-food-hating husband also gave it the nod. I made it with thawed frozen broccoli and 2 chopped cooked chicken breasts thrown in for a meal in one dish. This one is GREAT Eats. Try for yourself :

    I did not enjoy this at all! It was dry, unsettling and the flavor was way too sweet. It did not taste right.

    I made the casserole for Rosh Hashanah and it was a real hit. I've never seen one with these ingredients but they really came together well.

    I would recommend not blanching the brocolli, as it turns out overcooked after baking. I'd also leave out the salt--the ramen flavor packet is plenty (I use shrimp flavor.

    The flavor and texture improves as a leftover . . .
