I have an electric oven, but had the same problem as the other person with the chicken taking much longer than stated for it to cook through and juices to run clear. The lemon and pepper are just slightly overpowering...I think I would use less next time.

I never thought I would butterfly a chicken but I did and this was delicious. I love using old veggies as the roasting pan!

Incredible flavor. Would broil skin side down next time so skin comes out crispy. This also takes more cooking time than noted. Wonderful results. Made homemade chicken enchiladas out of the leftovers. Yummy.

This recipe really is the best roast chicken! Very simple, and the dark meat cooks in the same amount of time as the white meat. A little messy, but worth it.

This was a quick and easy meal to make for the family. I will build off of this and make roasted chicken more often.

Really an excellent twist on a staple comfort food. The idea of floating the roast on vegatables "slightly past their prime" is great for all of Alton's reasons. Best of all ... delicious chicken!
    Thanks, TB

This recipe did not seem to work very well in our gas oven. The recipe is tasty but the chicken did not cook in the amount of time shown on the recipe. I can only conclude it was the difference between an electric and gas oven.

Well done, AB. This is the only way I'll make chicken from now on. I tried once; love it; and have been roasting chicken this way ever since! It's a hit with the whole family.

This is what I served at our house warming and everyone loved it. I was amazed how fast it cooks. I HIGHLY recommand this recipe.
