    i think this will be the only way that i will cook a whole chicken now. it was very jucy and lots of flavor, i used some other spices and the chicken tasted like it was a rotiserary chicken that my family LOVED!!!!

    With Thanksgiving coming up and oven time at a premium why not butterfly and cook your turkey this way, too? I learned this technique watching Julia Child and now we do it this way every year. I generally do not use red wine vinegar, but make a more traditional gravy with the drippings, but I promise you will save time cooking and carving is a breeze!

    I love this recipe. Great meal and wonderful timesaver. When I buy fresh whole chickens in bulk, now butterfly and season them before freezing for later. I've tried it out on the grill too without the bed of veggies and it always turns out great.

    Alton, I love you....Can I keep you forever and ever????


    I never thought I'd roast a chicken...ever. I saw this and thought it looked promising, and after butterflying the thing (and I'm not a fan of touching a raw chicken it was a suprising change to what I had been normally making.

    On a side note, I'm totally addicted to this show. TY

    I really enjoyed the recipe. The jus was wonderful, and the chicken was extra-juicy. Unfortunately, the skin was not as crispy as I like; I may try it in reverse order next time (breast side up LAST instead of FIRST.

    This fast became my favorite way to cook chicken. It is so easy to modify for your individual tastes. I have used the seasonings Alton used in the chicken "stuffing", added some sage and used it in a turkey. Oh my! You can also use some lime juice and a dash of tequila to make an incredible flavor. I have used this chicken recipe on both the grill and in the broiler. Wonderful, Wonderful!

    This is a wonderful technique for chcken. It works very well on my Weber as well. I added some chopped herbs under the skin as well for moe complexity. All in all terrific
