a lot of people here complain about the vinegar in the recipe, but i enjoy it. i didn't have any white wine vinegar, so i substituted apple cider vinegar. my idea is that the taste is very subjective, because when my mother tasted the salad, she complained about the vinegar (she ate a bowl of it anyway!. for ease, i diced the bacon before frying it very slowly in the pan, and i also allowed the vinegar to reduce in the pan for a minute before adding the remaining ingredients. instead of dill, i stirred minced scallion in at the very end. i enjoy this salad warm, because it reminds me of a spinach salad with warm bacon dressing.

This is a great way to change-up rice. Brown rice is very nutty and very chewy. This recipe is wonderful, however I recommend you cut back on the amount of vinegar.

Like many other reviewers here, I found 4oz of vinegar to be far too much. 2oz is plenty, and a bit less would probably work, too.
Other than that, outstanding!

Thanks Alton for another awesome recipe. I can now eat healthy junk like brown rice and actually enjoy the taste because it's disguised with bacon and dill.

This is a great side dish warm or cold. We thought the vinegar was not overpowering. If you want a little more crunch stir in some steamed broccoli and water chestnuts.

Thanks to the baking of the rice, I will never again have sticky rice. The rice was perfectly fluffy!
I liked this dish, but just as a few other reviewers noted, I would cut the vinegar in half. Even though I love vinegar, it is just a little too much for this dish.
