My mom and I love this - we can never get too much garlic. Keep in mind that it may be a bit strong for some people - my brother and dad hate it. I don't think the salt is even necessary you get enough flavor from the olive oil & garlic. Plus this is way healthier than those garlic breads drenched in butter & cheese.

I used an herbed, flat loaf of Ciabatta from a local Italian bakery...crunchy.....other than changing the bread--this recipe is PERFECT! YUMMO!!!

Alton does do an authentic bruschetta. I always make bruschetta when I have part of a baguette left---or any other crusty bread for that matter. I do tend to burn things more easily when I put it under the broiler---Sooo I bake mine at 350* for 15-20 mins. Just check them at 15-tap on them, are they crusty enough for you? They don't have to be very brown to be crusty for a bruschetta.

to those that are having problems applicating the garlic: you can put minced/chopped garlic in a small bowl of olive oil. stir and let sit for an hour or so. then, you can brush or spoon on the garlic infused oil directly on the bread. both convenient and delish.

I love authentic dishes ...like your grandmother would make or your Italian grandmother as this case. To make is even faster to prepare, I slice the bread lengthwise and toast cut side up. When after the garlic, olive oil and S&P, I cut it on the bias.

This doesn't sound like the bruschetta I make. This is exactly how I make my garlic bread. Bruschetta has tomatoes, basil, olive oil, salt and pepper. Serving bruschetta over this garlic bread if wonderful!

I roasted my garlic before I rubbed it on. (The roasting turns the garlic into a spread that is delicious!!!
Think maybe Alton did this also on the episode, but I can't be sure as it aired awhile ago...
Anyway, very traditional and yummy... Definitely "good eats"
P.S. What's up with the Elton James thing?
