    You need to squeeze the garlic as you rub it and remove as much peel as possible. Don't smash it into the bread, just rub it vigorously with a little pressure.

    is there some sort of trick to getting the garlic rub to work? When I cut a head in half and rub it on bread, I just get a lot of skin flakes from the dried lining in between the cloves and very little actual contact with the garlic inside the head. This just makes a papery mess on the bread with little garlic flavor.
    If you've figured out how to do this step gracefully, please post. If you're struggling like me, consider cutting a tomato in half and rubbing this on the toast and using a good garlic powder or some minced roasted garlic on top.

    I make this as a pre-dinner snack when hosting dinner parties and as a party food with a 3-layer dip....everyone always wants to know how I made the bruschetta, and there is never any left. This one's a keeper.

    I love the garlic saltiness of this bruschetta. It's so simple, yet so flavorful. For a bit of freshness, I add some fresh basil and chopped Roma tomatoes. YUM!

    I enjoyed the easy and quick part and the kids loved cooking with me. I know from Elton's other recipes that he is one heck of a chef. I guess it all comes down to I expected more from Elton
