My girlfriend and I just made this for dinner with mashed potatoes and maple glazed salmon. We have to say it's probably the best brussel sprout recipe we've ever tried. The only changes we made to the recipe was to use a smooth dijon instead of a coarse dijon. I also added more blue cheese to mine (as I'm a big fan.

We'll need to remember to make a double batch when we invite company over, as my girlfriend and I finished the whole thing ourselves.

Looks like this is another keeper (along with the marshmallow recipe we christened our mixer with. Thanks Alton!

My husband likes brussel sprouts, I do not. I've never even cooked them before because I REALLY dislike their bitter taste. However, this recipe combined enough delicious flavors to where we were both satisfied! Thanks for this great way to prepare a healthy vegetable.

Made this for a side dish today. I haven't eaten brussel sprouts in 20 years so I thought I would give them a second try.

I would make this again but omit the bleu cheese because the brussel sprouts are already bitter enough.

We served this for dinner on Christmas evening. It barely got touched. Seems everyone objected to at least 1 ingredient. Personally, I love Brussels sprouts & bleu cheese, so I don't get their hesitance. I'm making it again for my daughter who loves brussels sprouts, but whom I now know hates bleu cheese and I'll substitute Havarti. This time I'll do a very fine dice on the apple & maybe add a little applesauce as I thought that flavor was lost in the mix. It's very important to add the bacon at the last possible moment to keep it crunchy. I find that all of Alton Brown's recipes are well constructed and I feel this is another high quality dish by a true gastronomical intellectual.

I love brussels and after reading these reviews I was expecting something wonderful... sometimes simple is best and all these added ingredients didnt impress my family as much as more simple recipes.

I am a Pescatarian, so I omitted the bacon, used canola oil and extra salt, and it was so DELICIOUS! My boyfriend made it with the meat on a separate occasion and he thought both ways were awesome (though I bet he was just saying that the meatless version was just as good for my sake. Anyway, it is awesome. Thanks Alton, you never let me down.

Highly recommended. This is the first time I've ever cooked Brussels Sprouts. But Alton's Good Eats episode convinced me to try it. Outstanding! And very easy to do.

Okay, this was really big success at Easter too!.

But, add bacon to anything at our house and it is a big hit.
My Husband was bragging on this to his Mom and sister who started our son liking Brussels Sprouts when he was very young.
I cooked this according to the recipe but substituted provolone cheese.

Have to double the recipe next time!

    Thanks Alton!

Love brussels sprouts any way, but always had them with butter and a little lemon juice.
We made these and they were "off the scale".
The two of us finished off the whole thing !
This is a keeper for sure.
