I was really disappointed with this recipe - I made it to take to work tomorrow but I'll be embarrassed to admit it's mine. The cake didn't cook in the middle and the icing was way too runny, even though I followed the recipe to the letter. It does taste good, but it's very hard to eat without getting cream cheese everywhere.

This is the best carrot cake ever. Glad I had extra icing as I couldn't stop eating it alone. I didn't have yogurt so I used sour cream. Just wonderful!! Alton, you are the best!

This cake was so amazing. I was really confused about the cake pan...I used a regular 9 inch pan and it was FULL so I was worried about spilling over, but it didn't. It did kind of muffin a little bit but it was fine, I just trimmed it off before flipping it onto a rack. If you frost it as soon as it's cool to the touch, the center will still be warm and you literally will be eating heaven.
I followed the instructions about turning the oven down, but didn't take the temperature. I just inserted a stick about 15 minutes after reducing the temp and it came out clean so I took the cake out.
