    This was soooooooo yummy. I followed the recipe as exactly as I could (I might have used a tad more finishing cheese than he suggested and it was perfect! I loved the spicy and the cheesy and everything was melt in your mouth delicious. It's even good the next day! AB never disappoints me . . . Oh, and I never ever saw the point of putting dry mustard into a dish until this one. Usually, it seems like "magic yellow powder" that I neither taste nor miss, but in this dish it is tasty and detectable, giving a perfect tang that made me keep going back for more.

    This was so ridiculously good, we couldn't stop eating it. I used fat free 1/2 & 1/2 and reduced fat cheddar, it was still amazing.

    This is a great substitute for mac and cheese...I even substituted reduced fat cheddar and half and half and it was still yummy. The smoked paprika makes the recipe!

    The man pulls out a hole saw to core a cauliflower. Alton, if you and I weren't both married, I'd have your kids.

    Anyway. As far as the recipe goes, not a bland dish in the least. I think I might have had a smaller head of cauliflower than it called for, so it was plenty spicy. Alton likes his pepper, but I don't think I do. I'll probably cut back just a bit next time unless I get a proper sized cauliflower.

    I used medium cheddar and milk instead of cream because it's what I had on hand, and it was still great.

    Overall, a great way to serve veggies. And we all need more veggies.
