    I made this with goji berries, unsweetened vanilla almond milk, splenda, and non fat plain greek yogurt. However, despite all the modifications this dish was still amazing:

    The couscous is a nice alternative to rice, and cherries are a nice alternative to using raisins in a more traditional rice pudding recipe. What I really like about this recipe is that the yogurt ensures that your pudding gets nice and plump without requiring heavy creams or fatty ingredients. The cinnamon offsets any mild tanginess from the yogurt. This tastes great freshly made or after a couple hours in the fridge.

    Happened to have all the ingredients on hand. This was a quick and easy recipe. I used plain yogurt and also added toasted sliced almonds. That added a nice crunch to the creamy pudding. This is definitely a good recipe to have for last minute desserts.

    I used plain yogurt and dried cranberries because that is what I had on hand. I added extra sugar, about 2 T, to make up for the changes. It turned out excellent. I think this is going to be my lunch tomorrow. Thanks, Alton!

    I loved the couscous pudding
    it tasted real great.
    After I had eaten it all
    with my tounge I licked the plate.

    Anything made of couscous
    I'm always ready to eat.
    For I'm a vegitarian
    and I don't eat meat.

    The flavor was great but the coucous never got as creamy as smooth as the rice pudding I like does. Maybe I didn't let my coucous get fluffy enough. I will probably make this again only with rice.

    This dish is extremely simple and easy to make. It has a great flavor and texture. I've also used rice instead of couscous, and cranberries instead of cherries(although I used less because of their tart flavor. I'm sure many other dried fruits would work well.
