    I hope I am replying soon enough. I leave them in the oven as long as it takes to finish off the gravy. That is usually about 15-20 minutes. I think keeping them in the oven is just to keep them warm until everything else is done.

    I hope you enjoy this as much as I do. If you are feeling ambitious try Altons Country Ham for Easter. MMMMMmmmmm.

    How long did you keep the steaks in the oven? I want to make it this weekend and noticed it said to cook in the oven after frying, but didn't say how long.

    I love Good Eats and have every episode on DVR. Whenever I want to make something, I always check to see if Alton has a recipe. I love CFS and so I turned to Alton to help me make it. The steaks fry up nicely and are very crispy on the outside, but when I made the gravy I was disapointed. I'm used to the white gravy and this gravy comes out more brown-ish. (also I hate thyme So I ate the 1st steak and decided to go back and give the gravy another shot. This time all I did was re-heat the second steak in the pan and added a little more oil. Then I added the flour - off the heat and whisked it in. Then I only added milk and whisked back over the flame until it was thick and loaded on the fresh black pepper, and a litle kosher salt. It looked just like the kind I'm used to and tasted great over the second steak. I usually stick to Alton's directions to the T but this time I had to revise.

    I always order chicken fried steak when I see it on menus but I wanted to try making it at home and I'm very glad that I did!! I bought cube steak from the store and increased the thyme (my husband and I both love thyme but other than that I followed the recipe to a T and it turned out amazing. I will definitely be making this again!

    My father in law loves Chicken Fried Steak, so I searched out the internet. WOW this was not only great but, easy. I used the cubed steak at the store. Moist, tasty, and crispy.

    I'm a northern boy and can never find chicken fried steak on a menu. I had a craving for a good chicken fried steak and came across Alton's recipe. Wow is all I have to say. Not only was this tasty but might have been the best chicken fried steak I have ever had. Thanks for the great recipe.

    I bought the steak pre-tenderized and it still turned out wonderful!!! My texan family ate every last bite of it!

    I love this recipe! I've been making it for about a year now, and its never turned out bad. I had never had any success at making gravy before this, but it turns out great! Just be sure to use a real metal whisk - the silicone ones and other instruments just don't work and your gravy will turn out lumpy and pasty. I stick to the recipe exactly, except I usually use store bought steaks instead of cubing my own.
