You can make this with store-bought cube steaks. I know Alton wants you to make your own and I bet it's better that way, but it's a solid crowd pleaser with store-bought ones. You do have to work a bit to get the egg and the flour to stick to the store-bought cube steak, but after a couple of tries I've got it down. Fresher eggs help.

Don't skimp on the herbs and seasonings.

The basic concept was good, however, the steak was tough despite vigorous tenderizing because it was Not cooked long enough to make it tender. I've been cooking for over 50 years and if this type of steak dish isn't cooked long enough it never gets tender...unless you aren't using steak that is available in the regular grocery stores and get some high priced cut only for resturants! If you're going to develop recipes for the general public, use ingredients they will be able to get.

Total perfection. Steak has that crisp crust and the gravy is southern heaven.

this was a great quick and easy dinner. I added some essence to both the flour and the egg wash and it gave it a real kick.

leave it alton to put together something simple and delicious. although it takes a while to put it together, it's well worth the time. great for cook aheads too. tastes even better some time down the line, and freezes well in air tight bags.
    thanks alton....

i know i am defying all cooking laws... but all i had in the freezer was fillet mignon. it, however, turned out amazing. i cut the fillet in half so that the steak was not too thick, and followed the rest of the recipe. afterwards, i made a nice gravy with some rosemary--- simply the best. i love good eats and this recipe is awesome.

I grew up eating chicken fried steak as a little boy in west texas. Most CFS you get when dining out are deep fried and that's not it. Alton nailed it and liked it very much. It's exactly as I remember.

I am a huge country fried steak fan, and this was just OK for for me. I would have liked for it to have a little more thicker, crispier crust. Other than that it was OK.
