This is a nice quick light soup recipe. I did add some cooked chicken for texture. I also switched the tarragon for thyme just based on taste preference. It isn't an overly fatty orin your face kind of chicken soup, but it makes a nice weeknight meal.

If you add a boiled and shredded piece of chicken ***** to this one it becomes a nice, light chicken soup. It is on the lighter side but since I am not a fan of the heavy chicken fatty flavor of regular chicken soup, I love it and so does the rest of my family.

I usually like all of Alton's dishes. This recipe was is not good. It lacks any chicken flavor at all. I ended up throwing it away. Alton please make this one better.

Whenever I need a recipe for anything I always try and find Alton's, because are always amazing and delicious; this one wasn't any different! it literally took me 15 minutes to make, and the flavors were so simple, clean and satisfying. Thank you Alton!

I also added 2 more cups of water, a couple of bouillon cubes, 48 oz of chicken stock, carrot ( needs to be sauteed in butter for a while if you want the soft all the way through, lotsa herbs, and chicken pieces.I sauteed the carrot, onion and celery in a couple Tbls of butter for a while with a lid because my poor sick boyfriend wanted his pieces soft and mushy. : This was wonderfully flavorful and quite possibly the best chicken noodle soup I have ever had.

I own a restaurant and needed a quick soup to fix first thing A.M., so I went to the store and they didn't have fresh tarragon, so I bought fresh Thyme. I used chicken stock, added 4 cups of cold water and 4 tsps. chicken bouillon granules. It was awesome on the first taste, I didn't need to add or adjust...I also, can't wait to find tarragon and try it with that...Oh yeah, I grilled 3 chicken breast, chopped up fine and added them.....GOOOOOD STUFFFFF...

This was super easy to make. And it was really good too. I altered it a bit though. I let the veggies sweat in butter until tender (Not a fan of crunchy in my soup. I kept all the measurements the same, I added called for amount of stock, but added an extra 4 cups of water. I did this b/c we are a big family, we would starve if I left this recipe as is!! But it was good. Kids LOVED it. And did I mention it was REALLY easy to make!!

You want chicken - go ahead and add it. You want carrots - put them in. You wnat flavor - not to worry, it's in there! This was just what the doctor ordered.
