Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons unsalted butter
  • 1 whole canned chipotle pepper in adobo sauce, chopped
  • 1 teaspoon adobo sauce from can of peppers
  • 1/2 teaspoon salt

Directions

Put cubed potatoes into steamer basket and place steamer into a large pot of simmering water that is no closer than 2 inches from the bottom of basket. Allow to steam for 20 minutes or until the potatoes are fork tender. Add butter to potatoes and mash with potato masher. Add peppers, sauce, and salt and continue mashing to combine. Serve immediately.

    We tried this recipe as we love sweet potatoes and also love spicy food. Well, the ONE chipotle pepper and tsp of sauce... added very little flavor, and what flavor it did add wasn't especially good. We didn't think it was hot or even the least bit spicy, and the flavor of chipotle peppers is a bit odd. I would pass on this one. Read more

    Read carefully-- USE ONLY ONE CHIPOTLE PEPPER!!!

    The recipe is worded strangely and I think Food Network should consider changing it. It says to use one whole canned... chipotle pepper, but it reads like you should use one whole CAN of chipotle peppers. Aside from this -- it's a good recipe, and I'd do it again on occasion. I'm a big fan of sweet potatoes and the twist of adding chipotle flavor to them is a pleasant change. Read more
