    So after you are finished cooking and eating and are ready for clean up, what is the best way to store the oil?

    Should I plan on leaving it in the dutch oven until the next use? Should I dispose of it and start fresh each time?

    What do you recommend?

    I only cooked the fish. I couldn't find brown beer so I used any beer. the fish was really good. I also added flour to the cornstarch , cause I didn't have enough corn starch. I also seasoned the corn starch and flour.

    I didn't make the fish because I didn't have any on hand, but I did try the chips, and let me just say that this is, once again, the only method that has ever worked for me! I tried Alton Brown's chocolate chip recipe as well, and it was the only one I'd ever tried that worked as well.

    Alton, you are a genius. I love you. These are some fabulous chips! <3

    The fish was great. I used Tilapia. Doing the Chips was sort of a pain but they had a good flavor. I suggest using a little more Red Pepper to kick it up a little

    I thoroughly enjoyed the fish portion of this recipe. I even tasted the beer. It was light and didn't taste greasy at all. I did have to add another 1/4 to 1/2 cup of water to thin out the batter a bit. The original recipe seemed too thick. Tilapia was used here but I do think cod would've tasted even better.

    I enjoyed making this for dinner this evening. It worked well for a 2 person tag team in the kitchen. My husband looked after the frying part, and I did the prepping. It was nice to have the opportunity to work together in the kitchen creating yummy food we both enjoy.

    The texture and flavor of the batter for the fish was excellent--instructions clear and easy too.
