haven't finished it just yet (they're drying but the sample I took tastes great. I did have trouble working with the mixture and added a bit more coconut (luckily I had some from the macaroons I'm planning to make to make it more stiff. I also used a 1 TBSP disher and pushed it real hard against the bowl to pack it down. So far everything seems to be working well. next time I will probably use less condensed milk though.

First, watch the video.
Use UNSWEETENED coconut.
If I had the nuts, I'd roll the balls in nuts after dipping instead.
Use twice as much coconut. Or half as much milk.
Mix and let set for 2 hours.
Use a mini ice cream scoop-the kind you squeeze and it pops out the dough.
So you don't have to handle it as much.
NOW! This is important !!! Use LATEX gloves. I started by squirting some PAM on them, but they stayed free of sticky residue so I don't think it's necessary. Quickly roll into balls. Here's where I shaped them into Mounds type nuggets. Put in freezer about an hour. Keeps them from falling apart while dipping. BTW: If you ever come across an electric fondue pot, these are great for dipping. I bought one a garage sale for .25 .It's great for melting chocolate.
Give it a try and don't be scared.

Like many other reviews, I found the dough difficult to mold into shape. Then I thought, "hmmm. What makes sticky stuff easier to manipulate?" The answer, of course, is a lubricant, like water! If you dip your fingers in ice water and then handle the dough, it shapes much better. Because the water adds moisture to the mixture, stick the shaped dough in a 250 degree oven for 10 minutes and then pop in the frige for an hour. Much easier! And super yummy after dipped in chocolate!!

I made these for the holidays and everyone loves them! My husband loves them so much that he almost ate all the balls before I had a chance to package it for people! Thank you for sharing your recipes. All the recipes that my husband and I tried from you have never failed us!

These were a mess. I wish I would have read the reviews first. They were too watery, so I put in twice the amount of coconut to compensate, but they never cooperated. Since I am just engaged, this is the first time I have made Christmas cookies, and I wanted to show off. Too bad I wasted all that money for ingredients when I have just lost my job. I wonder if food network ever reads reviews, as well.

This was awful. I was so excited to make my very own version of an almond joy but much to my surprise it was a disaster. I am an excellent cook and can follow just about any recipe. I listened to other reviews and I cut the almond extract and condenced milk but I couled not get rolled balls to form. I tried to refridgerate the mixture, squeeze the excess liquid out, semi-balls were formed carefully putting them on a pan. I tried to freeze them to harden them before attempting the disasterous chocolate coating. DO NOT BOTHER WITH THESE, GO BUY ALMOND JOYS!!!

I'd like to try these again, but maybe with only half a cup of condensed milk instead. Or possibly 3/4 cup (? Also, the almond extract was too strong even for me (I love almond extract! So next time, I think 1/2 or even 1/4 tsp. of almond extract, and/or maybe 1/4 tsp. of coconut extract might be better. Plus, I didn't add nuts this time due to a co-worker's allergies. But I imagine the chopped macademia nuts make them taste awesome (or how about chopped almonds, making it taste sort of like an almond joy? I'll also try freezing them slightly prior to dipping in the chocolate, to help keep the coconut from falling off and getting into the chocolate. (my freezer was too full or I would have done it that way today.
Lastly, make sure you seal the balls entirely in the chocolate; otherwise, the condensed milk tends to leak out of any openings it can find. I think with a few modifications, this could be an awesome candy recipe.

I almost screwed these up by using the whole can of condensed milk with a bag of coconut, but then I realized my mistake and added more coconut to make up for the extra milk.
I also had some problems initially rolling these into balls-pressing into balls as described in the instructions didn't work for me. I needed them to be tightly rolled for them to stay together in the chocolate. After trial and error I found a way to make it work. The problem was that the condensed milk would stick to my hands, making the coconut stick to my hands, and this got progressively worse until the stuff stuck to my hands instead of itself. However, I found that if I rinsed my hands with warm water between every 3 or so balls (I just put a big bowl of water beside the balls, and left my hands just slightly wet after getting off the excess SC milk, they rolled out very easily and tightly. Then I left the balls in the fridge on Saran Wrap a few hours and dipped in melted chocolate chips using a couple of spoons. Really easy and everyone that tried them LOVED them. I also tried this with sliced almonds-this is even better, like almond joy. Also, using a teaspoon of almond extract with a larger batch of these was enough almond flavor for me. Definitely worth a little experimenting in the kitchen to make it work.

couldn't turn the mix into balls it was too goopy. tried to improvise put them in the fridge they never got hard. dropped chocolate on them put them back in the fridge. they kinda set up but when i ate one they were disgusting. the almond was overpowering. i ended up throwing them out. will not use this recipe ever again.
