I too, had the problem of balls of goo and coconut! I got so frustrated with the mess that I almost threw it all out. They kept falling apart and I had the puddles of goo. Couldn't roll them in the chocolate without having them fall apart so I just dipped the tops in. Once they finally dried out they were really good and ended up being a great hit with everyone. I know that I measured everything exactly and used the right kind of milk (condensed. I will try them one more time. Alton needs to give us some tips to make it less frustrating.

I had the same issue as several of the other comments, they were a bit messy - but still delicious. But since I live in Florida and it was humid when I made them, I just refrigerated them for a couple of hours and they set up fine. I found that you have to dip them while they are still cold, so maybe do them in two batches and keep the second batch refrigerated. If they are still too sticky, I rolled them in some additional coconut flakes and refrigerated again. I used dark chocolate, and almonds instead of macadamia nuts. YUM!

I was disappointed. Like others, mine did not really hold together. I ended up drizzling the chocolate over them. Also, even with only 1 t of almond, the flavor was overpowering. We took one bite and tossed the entire batch into the garbage.

Maybe Andrew and Benjamin used evaporated milk instead of condensed. They can be confusing for beginners.

I made these today. I think what might have happened to the gentleman also from TN ... was it humid the day you made it? Today it was raining, so my consistency was a little mushy, but I popped them into the refrigerator before rolling. They did fine - and I am taking them to a Girls Night Out tonight. These are wonderful!

Didn't have problems with the condensed milk at all, measured everything exactly... Set up perfectly and had delicious flavor. The almond flavor was very strong though, would maybe only use a teaspoon of it next time... I also liked the suggestion of using almonds instead of macadamia nuts... then could maybe add some coconut extract. Great Recipe! Love Alton Brown!

Recipe was great! Thanks for sharing and you'll hear no sarcasm from us if it doesn't work out on a recipe. Not everyone can be perfect....

I had the same problem as "Andrew from Martin." The sweetened condensed milk puddled up under neath the balls of shredded coconut. I even let them sit in the fridge over night, and they were still puddly. I ended up melting the chocolate and pouring it over the mostly set balls of goo and coconut. The flavor ended up being pretty nice, although messy delivery.

You know, if they had actually set up in the hour suggested, but instead, there were small puddles of condensed milk just under the balls. I waited 2 1/2 hours, they never set up. I even tried the freezer, but once the warm chocolate was on top, they started melting. Thanks for a huge mess, Alton.
