When I first married my wife, I jokingly said to her "Honey, _never_ let me near the kitchen--it'll only end up tears at best, and at worst I'll burn the house down."
To turn up the pressure even more, my mother-in-law was coming to dinner the night I was attempting my grand foray into fudge-making. I can barely make scrambled eggs--and here I am attempting a difficult recipe for a person who by all accounts is a very fussy choco-holic. This had all the makings of an Oscar-winning disaster movie.
I was very careful to follow the recipe to the letter. I have an electric stove, so I had to jockey the heat a little bit to ensure the right temperature, but I fixated on the candy thermometer and everything seemed to go really smoothly.
I'm loathe to dispense advice on how to make it. About all I can say is that a good CANDY thermometer is really, really important--as is some patience, especially if you have to jockey the controls on an electric cooktop.
And how did my mother-in-law like my fudge? Well, I had to make a new batch this morning, and am watching the bubbling mix slowly cool down to 130? as I write this. Hopefully this batch will be just as good as the first.

Turned out great. I'm just adding a note to point out that it took about 1 and a half hours for the fudge to cool from 234 to 130. The first time I tried it, I started stirring after ~10 minutes and it ended up grainy. If you wait until it hits 130, it is not grainy.

YUMMY-YUMMY
This fudge makes you dream about it. Fantastic. Follow recipe carefully, better yet watch show to learn fine details. I even went and got the same thermometer that he had on show. Worked exactly as stated. YUMMY-YUMMY..... Got to go, my husband has requested an encore..........

I've been looking for a good fudge recipe since this past Christmas. That was when I had real homemade fudge for the first time. It was love at first taste! I've tried some store-bought fudge, but it was never the same. Then I've tried the recipe at the back of the marshmallow fluff jar, but it was way too sweet, and not like the one I had at Christmas. Then I found this recipe - YUMMY! The only thing is that I reduced the sugar to only 2 cups - I don't like anything too sweet. It's perfect! Before I got it right, I made it a few times and it didn't set ( although the taste was still great. I'm guessing that I didn't cook it to the proper temperature due to my thermometer. I'm going to invest in a better candy thermometer so that it sets everytime.

Well, I can imagine that this fudge recipe is probably delicious. I measured everything correctly and followed all instructions except I forgot the part where it says "use a candy thermometer". OOPPS! So when it came to letting all the ingrediants simmer on the stove I had no way of knowing when it had reached the right temperature, end result being the fudge did not set. Try Alton's peanut butter fudge. It is easy and delicious. I have made it twice in the last month. I have not, however, given up on the chocolate fudge. But don't forget to watch the temperature...ITS A MUST!!

I've made fudge all my life, but until Alton's fudge show, my fudge was typically grainy. I love this recipe and it is marvelous fudge.
