Living in denver at 5,280 feet maybe there are a few adjustments I need to make.
My fudge came out a bit "grainy". I have read many of the reviews and will now adjust my final cooling point to 130 degrees (how ever long that my take. The recipe said to cool mixture for 10 minutes or 130 degrees. After 15 minutes my mixture was still at 200 degrees.
What ajustments do I need to make in the temperature (high 234 degrees and low 130 degrees for being a mile above sea level - 5,280' ?

This was my first time making fudge and it worked perfectly. The key is patience.
One thing to note, in the show, Alton clearly states to cool the mixture to 110F. However, the recipe calls for 130F. After reading a few reviews, it looked like 110 was too cool. I went with 130 and it worked just fine.
Also, stir until it just STARTS to turn matte. Any longer, and it will be a brick. You'll feel it.
I used a marble counter top to cool it down (30 min. Patience will be rewarded.

I loved the easy way in which the recipe was written and how simple it was to follow. I also learned a new trick with covering the pan, it helps to keep the sugar from crystallizing.

I've never had good results with fudge before eventhough I love it. I watched Alton's show and followed the recipe exactly. It turned out perfect! I love Alton's show.

This recipe was great, very smooth and creamy. I'll never again be satisfied with the fudge made with marshmallow creme.
A bit of warning though- like other reviewers have said, it is VITAL to wait until the fudge is cooled 130 degrees before stirring to get it to set up. I had to wait 45 minutes for it to cool to that point (even though my house is 62 degrees inside but it's not going to set up otherwise.

The flavor just wasn't as good as I grew up with. Dad made his fudge with brown sugar.. regular milk and added just a tiny teaspoon of peanut butter at the end along with the butter. Now that tasted like fudge!!

Oh this is good. As of tonight, we have made this recipie 3 times this month. It turns out the sugary flakey sort of fudge for us, not the chewy brownie sort of fudge. We leave out the nuts. This is the kind we like, and we usually have to wait for the fairs to come through to get this type of fudge. My mom is thrilled.
