    This fudge was wonderful, very creamy. I did substitute evaporated milk for the half & half but it was still great. If you love old fashioned chocolate fudge you have to try this.

    I guess it must have been beginners luck. I have never made fudge before but this fudge was a huge hit. I followed the recipe exactly and as the others have said, it took more like 35-40 minutes to cool to 130 than the 10 but well worth the wait. I used an old fashioned thermometer (technology is very unreliable and it turned out PERFECT! My arm got tired getting it to the matte but the taste is rich, velvety and oh so yummy! Thanks Alton.

    I think the 10 minute waiting time mentioned in the recipe makes one a little impatient since it seems to takle about 30 minutes to cool from 234 to 130 degrees.
    The boiling up to 234 also takes some patience. The first time I made this I raised the heat from medium low to help that process along and the fudge ended up a little soft.
    The second time I was able to just follow the directions and was rewarded with wonderful and perfect fudge. Everyone in the house quickly gobbled up all the pieces. The stirring is a little tough, my wife probably would give up, but in my opinion the result is more than worth the little bit of extra effort,

    Great recipe... however cooling to 110 takes around 45 minutes and not the 10 listed in the recipe.

    Have made it 4 times, and it has come out perfectly every time!!!

    I have had horrible luck with fudge recipes (they never set up or they stick to the pan but this one I actually have luck with! It definitely takes longer than 10 minutes to cool to the 110degrees and you really do need a digital thermometer (I used a regular candy thermometer which sorta worked. Your arm definitely gets tired towards the end but it is one of the richest and yummiest fudge recipes I have ever had (sorry Mom. LOVE YOUR RECIPES ALTON!

    On several occasions, over the years, I have tryed to make fudge. Each time, I failed, so I gave up. Since I became a fan of Good Eats about a year ago, this past holiday I decided to try again, keeping in mind the fudge episode.

    I carefully followed Altons advice. The fudge came out GREAT! I was so proud, I bragged. Then my kids and I decided to give fudge for presents. I made the fudge and then rapped it up in inexpensive containers. While I do admit the thrill was over after the 7th batch, each batch was delicious. By the way the candy store charges ALOT for fudge, alot of people don't buy fudge because of that reason and they really appreciated it when they recieved such a tasty treat.
