These chocolate truffles are better than any store bought truffles I have tried. It was my first try at making truffles and I knew Alton Brown would come through with a great recipe. Since I had Bailey's in my cupboard from Christmas, I split the chocolate recipe in half and used the Bailey's in one half and Kahlua in the other, rather than rum. Both are so good I can't stop eating them. It is safer for my figure not to make these too often. Thanks Alton!!

This was the first time I tried to make truffles and I can't believe how easy it was. My family thought I had bought them from a candy shop. The most time-consuming and difficult part was chopping the chocolate (I doubled the recipe. This is a new yearly tradition, although next time I will not double the recipe!

I made these and gave them as Christmas gifts. They went over very well. People are asking me to make them all the time. They aren't difficult to make at all.

I made two batches of truffles, one following the recipe directly and using brandy, the other with rasberry liquer instead. Both turned out wonderfully. The flavor and texture are superb.
The directions in the recipe were very clear, I knew precisely what I needed to do for each step.

These are the best truffles ive ever tasted, and Ive tasted alot! Its the brandy, really, that takes them over the top. 1/2cup may seem like alot, but it actually the perfect amount. It gives the filling a wonderful deep chocolate taste, but you dont taste it unless you know its there.
NOTE: I didnt bother to do the heating pad thing, I used half Baker's brand "dipping chocolate" and half giridelli bittersweet chocolate for the coating. It turned out plenty "crisp" enuff for me :D

So simple and mmm... so good. So Alton'ish.
I cut a little on the brandy, and it gave the right amount of zing. Also, for some reason A LOT of cocoa stuck to the truffles. I actually ended up wiping some of it off.
When it was all said and done, I probably e-mailed the recipe to 30 people...
Will definatelly make again.
