OK can someone tell me, was half listening / distracted last night. Are these brownie to use the dutch-processed cocoa? or is it the other one Alton spoke about. I think he said one had fat the other not, or something like that...? I see that his syrup recipe calls for dutch-processed, and the cocoa powder mix recipe calls for dutch-processed as "preferred".

Good basic brownie recipe - I like an intense chocolate flavor, so I melted an extra 3 oz semi sweet chocolate with the butter, and added 1 tsp instant coffee granules to enhance the chocolate. Didn't have brown sugar on hand, so just used all white sugar. Also added 3/4 cup chopped walnuts.

Don't be afraid of the amount of cocoa in these, they come out SO rich and yummy! I reduced the sugar amount also.

Delicious! But I prefer chewy to cake brownies. I imagine I should take some egg out & add more butter?
Oh, & I added chopped walnuts inside & some grated bakers chocolate on top. Yum.

I gave this recipe 5 stars because it was SO simple, I could follow along with it while my 16 mth old was running around my legs and still have better - than - box brownie!!! They are so moist and good! I loove cake-like brownies and these were perfect! Will do add-ons next time like chocolate chips, peanut butter, or caramel. The best I've had!!!! Mmmmm lol

THE best best BEST brownies in the entire world. I put mini marshmallows on the top and let them melt a bit, then made chocolate frosting rather thin and poked holes in the top of the brownies and poured on the frosting. Holy Smokes!!!!!!!!!!!!!!!!
