    Forget melting the chocolate with this fantastic tasting recipe there is no need. Its easy and delicious. The brownies come out moist, dense, & rich. Gooey in the middle and a crisp layer on top and don't worry about the cooking time because 45 minutes at 300 is exactly what they need. I've even doubled the recipe and it still comes out perfect everytime.

    these are absolutely the most perfect brownies i have ever made and ate! i added chocolate chunks and walnuts to the recipe and the results were delicious.

    I am a dedicated Good Eats fan and also one of America's Test Kitchen (makers of the Cooks Illustrated books. So I made Alton Brown's recipe and a batch of the Cook's Illustrated recipe at the same time.

    I use an oven thermometer and my oven is accurate; Alton's recipe cooked exactly in 45 minutes.

    His brownies are delicious - but more like a cake than even a slightly chewy brownie. They have a cake texture and flavor - very very good.

    However, the Cook's Illustrated recipe, much as I didn't want it to, yielded a more classic brownie. Chewy, and so rich that you can only eat a small brownie at a time.

    I will use Alton Brown's recipe for the next chocolate cake I make though, it was velvety and rich without being overwhelming. I might make it again for brownies but use one less egg, to make it a bit more chewy. Cake texture aside, the flavor was absolutely delicious (but again not a typical overwhelming brownie flavor.

    best brownies ever! you will never buy a boxed brownie mix again (not that any of us would *ever* do that. However, i wanted to mention that the recipe in Alton's book does not come out as well as these.

    These brownies were soooooo moist, rich and FULL of chocolate flavor. They were plenty sweet and well, perfect. I can't imagine describing them as dry or crumbly because they were the opposite of that. Perhaps if they were overcooked they could become that texture but they were absolutely delicious. I had to cook them for about 55 minutes, but we live at a slightly higher elevation. Way to go Alton, these were the absolute best!

    These brownies are shockingly easy and taste like heaven. I have very limited baking skill and they still came out delicious, so definitely try out this recipe!

    I get so many requests to bring these to parties and for the recipe. One note: the cook time of 45 min is way too short; they usually take around 75 min in my oven.

    Best brownies I have ever made, way better than boxed recipes and they are so easy to make. Make sure you have some milk handy though when biting into one!!
