I just finished making these shrimp and they were delicious. I've never deep-fried anything before, but it was easy. The shrimp were perfect and golden, and the coating was very light - almost all coconut. We made an apricot ginger sauce from one of the other recipes instead of the peanut sauce, and it was terrific! They were better than anything I've ever had out.

Simple to make, great tasting appetizer. Perfect for parties, but also good as basis for a meal. Just don't burn the coconut coating.

This is wonderful. We didn't make this sauce, instead used an apricot-orange one. Our shrimp were small so we didn't butterfly them.

The coconut shrimp was good. I altered the recipe and substituted some of the coconut with coconut-caramel cookies. It was fantastic! The sauce as it's written was not very good. It was too salty and I could taste the fish sauce through the peanut butter. I had to do a lot of alterations to the peanut sauce to the point it's a completely different sauce, but it enhanced the coconut shrimp perfectly.

The shrimp juices was sealed in by the coconut the peanut sauces was a hit as well...

I thought this recipe could use a little more kick to it; it was actually kind of bland. It just needed more to it.
