Ingredients
- 36 ounces filtered water
- 12 tablespoons freshly ground coffee
- 1/4 teaspoon kosher salt
Directions
Pour water into the water chamber of the coffee maker. Place coffee into an unbleached paper filter and sprinkle with the salt. Once brewed, immediately transfer coffee to a thermos to hold.

You are often very scientific about your approach to food and this is one of the great things I love about your show. However, your approach to coffee is a bit lacking. I happen to work as a coffee professional and competing barista. Brewing coffee is all about TDS (total dissolved solubles. Coffee yes should be bought as whole bean and ground fresh, but as far as brewing it is best to measure the coffee you use from bean form not ground and measure by weight not volume. If people are making the large ticket investment as to get a burr grinder they might as well get a cheap digital gram scale as well, which as you know has tons of great and useful kitchen uses. Also while salt may be a good gastronomical trick to reduce bitterness, why not just avoid buying bitter coffee and buy coffee from great reputable boutique roaster? Espressomap.com is a great way to find great coffee shops and roasters. Just a few thought. I could talk on this matter for hours. Cheers Mate.
