I served the salad at a BBQ for 20 French persons and everyone wants the recipe. Perhaps it was the French mayo and the addition of hard-boiled eggs but it was an absolute success.

Great potato salad. I cooked my potatoes in the afternoon and made the salad late at night. Ate at a picnic the next day and it was really good. I was a little suspicious of the tarragon, but it ended up being really good. I had to add some dill though. This was in lieu of the pickles which are a little dramatic for the folks I was making this for. Oh, and a bit of egg-salad style eggs for good measure. But really good basic recipe.

I did make a couple of changes. I did not add the tarragon or the garlic. Everything I kept the same. I got rave reviews! Thanks Alton!

Made this recipe ... it is the most bland potato salad. I (and my family could not taste the herbs, or tell what was in it. Potato, white stuff and other stuff in it. Not your best Alton...

This is a great alternative to the mayo-laden salad. Much more flavor and texture.

Don't know how close the pickles I used were to cornichons, but it was very good!

I tried this with what I had: light mayo, reg potatoes (no red at hand, dried taragon. It was just ok for me. I then added more mustard, and then some dijonnaise, and whole grain musturd. Still... something missing. Then in a smaller bowl, I tried adding some light ranch, and even some curry powder. I didn't like that much better either. I'll let you know when I hit Eureka!!

Better than most potato salads, but nothing to jump up and down over.
