I read some of the reviews and considered cutting back on the garlic, but my hubby told me I was nuts.. and he was right. I substituted the half and half with non-fat milk and added 2 tsp of butter. I added a little more salt when it was all prepared and a pinch of pepper.. Excellent! Love it!

I halved the recipe and it was delicious!! I love garlic, and probably would have liked it a little better with an extra clove. The salt was fine if you know how to follow directions, but I probably should have let them cook for a bit longer than 30 minutes, since all i had to mash them with was a small fork, so it was a little lumpy. Instead of half-and-half, I used a tbsp of butter with 2%, and added a bit of black pepper, so with a few tweeks, it was great!

These potatoes are incredibly easy to make and were a hit at dinner. They are not too salty when you salt the water to boil the potatoes, not the potatoes themselves. I followed the recipe to the letter and did not find the garlic overpowering. I, for one, am a fan of creamier potatoes so despite this batch being delightful, I will add a little extra cream to the pot next time to make them creamier. Even my husband, who does not generally like potatoes prepared in any fashion, ate over half his huge helping!

I do not comprehend why many are complaining about the amount of salt and stating that a "mistake" was made. The TWO TABLESPOONS of slat is to be added to the WATER while boiling! NOT TO THE MASHED POTATOES!!! There is NO mistake in this recipe or on AB's part. This man couldn't make a mistake if he wanted to! He's a genius! And as for the garlic, once you've simmered it in the half and half it is no longer as strong as if you were to eat it raw...(as some are complaining...Yes, you should love garlic if you're going to make this awesome recipe.

Quote: "Peel and dice potatoes, making sure all are relatively the same size. Place in large saucepan, add the salt, and cover with water."

I used this recipe for my first ever mashed potato dish. I found it extremely easy to follow, especially with the video. To make my meal healthier, I used 2 large potatos and 1 cauliflower instead, keeping other ingredient in the same portion. It turned out perfect! Cauliflower adds the texture and fiber and mixes very well with the original garlic mashed potato flavor. Yummy!

The best mashed potatoes ever. It's the only recipe I use. Oh and the salt issue?? You need to add that to the water, not the potatoes after they've cooked. Hope that helps.

Someone transcribed the recipe wrong when they posted it to the site. 2 tablespoons salt is *way* too much. Otherwise, a very tasty recipe.

Have made this recipe several times now and it's a winner. But, the recipe as written is a bit confusing. Add the (2 T, or less if you're watching your sodiumsalt to the water with the potatoes before cooking, and then ONLY add more salt (to taste after you've mashed and added other ingredients if it's needed. I watched the video footage of Alton making this recipe and he added the salt to the water in the very beginning. Also, he said that the potatoes will initially be very wet when you add the half-n-half and cheese, so don't be nervous that you've added too much liquid. Cover and let sit for five minutes, and they'll firm up nicely.

The 2 Tbls of salt in addition to the 6 cloves of garlic make the pototes way too salty.
Next time, I will cut back on both those items, because I think it could be a very good dish.
