I prepared this dish just as the recipe said. It came out great! I had some awesome curry powder my husband had picked up at our local indian take out restaurant. It was so good even people who said they "don't like curry" enjoyed it. I think they just don't like their Mom's yellow curry from 1976.

This receipe rocks - Thanks Alton! You're show has always been my favorite - with it's "fun"ctional cooking.
I've never had too much success with making pot pie. However, our little town is low on gasoline, so didn't want to leave the house today. No chicken at home, but had some frozen pork - defrosted and browned. Added crushed garlic and used dried celery and Pillsbury crust from the freezer and pumped up the amount of curry, kept the rest the ingredients and process the same as called for in the recipe. My husband loved it!

I put at least 4 teaspoons of curry powder in mine, we like it spicy. This is great topped with the pastry, but for a healthier alternative, I've put the chicken/vegy mixture on steamed brown rice. I've also used ground chicken breast for this.

My family loves this dish, especially my 3 year old. I add frozen corn to the vegetable mix. I also increase the whole milk to 1 cup. Save yourself some time and cleanup by microwaving the milk and broth. For those of you nervous working with puff pastry, you do not have to be fancy. I thaw the pastry for 45 minutes on a papertowel. Then cut the pastry along the folds into 3 pieces. Roll slightly with a rolling pin or cup. Cut random pieces of puff pastry and place on top of vegetable/chicken mixture. My kids love to help me with puff pastry topping. Thanks again, Alton!

I have cooked this many many times, we add potatoes and extra curry powder for a kick.
I made it for our church kids as well for VBS and they just LOVED IT!!!!!!!!!

I'm currently on weight watchers and this is the first really good pot pie recipe I've found. If you use 1 T of oil on the veggies and 2 T butter (and skim milk, dividing the pie into 6 equals 6 points per serving. And it was really good! I didn't miss the pie dough at all. The flavors in the filling were amazing.

I used low fat biscuits instead of puff pastry because I'm on Weight Watchers. Also substituted margarine for butter. Everything else I kept the same. Very very good!
