It was a little more complicated than it sounds. Be sure to finish all your prep work fisrt so it takes less time. But this is a very healthy dish consisting of lots of fiber. It didn't come across as your traditional chicken pot pie. I think of them as having more of a soupy gravey consistancy.
P.s. i don't think this will impress the neighbors but it is a nice healthy family meal.

This is a really good recipe and honestly it couldn't be simpler. I roasted some skin-on diced Yukon Golds along with the veg med and that was a nice addition. Used skim milk to no bad effect. Also subbed veg stock for the chicken stock, as I prefer the flavor of vegetable stock. I rolled out my puff pastry b/c Alton did that on the show, and as a result it didn't exactly puff. I don't remember if his puffed high on the show or not. Anyway, there were a few spots where the pastry remained slightly gummy, I think where the gravy bubbled up over top of it. Next time I won't roll it out, maybe it'll puff better. I added mushrooms to mine, too, just because I love mushrooms. Would definitely make again. Great leftovers.

I am not usually a chicken pot pie fan, but this recipes is incredible. The filling is really good, but the puff pastry puts it over the top. My kids (8, 7, 5 love this. This is now in my regular rotation of "go to" meals.

I use this recipe every time I'm in the mood for pot pie. My friends and family love it! I often substitute the chicken with cubed firm tofu and mock chicken strips too when I feel like having a vegetarian meal. Sometimes I add a few sliced button mushrooms too.

I think that using fresh vegetables is primary over frozen or canned. Roasting method is a good idea.. but a poor substitute for roasted fresh carrots.
Many veggies can be put up and away in freezer for year round use; when they come in season. Often Alton over uses gadgetry and has too many methods/steps to what would be simple. I do admire his work in general.

This is absolutely wonderful!!! Made this several times already. This recipe is a keeper. I add more curry powder though when I make it.

I am new to cooking, but this dish is a very easy one to make, even without much cooking experience. This dish is loaded with flavor and was an instant hit with my entire family (minus my very picky younger brother. I would recommend this dish not only for new chefs but experienced ones as well. I know I will certainly be making it again and again.

This is no basic, bland pot pie. This has great ingredients and lots of flavor. The curry is just a hint of flavor to compliment the chicken and veggies. Thanks Alton!
