The recipe produces excellent results, but the first two paragraphs are out of logical order.
Most readers will know that oil, grease and egg yolks are incompatible with the successful whipping of egg whites yet the recipe calls for beating the egg yolk mixture first. Someone who doesn't know the rule or is simply inattentive may go on to whip the whites with soiled beaters.
Besides, one should want to wash the beaters only once instead of twice.
