It wasn't bad, it just wasn't good. It didn't taste like eggplant. Which for me isn't a good thing. For all the flavors and salt added to it, it wasn't as flavorful as I expected. If you don't like eggplant, I think you will like it because it's not very eggplanty. I love eggplant, and it's not something I enjoyed or will be in a rush to make again.

Very tasty! Didn't even taste like eggplant. I purged the eggplant for 1/2 hour with sprinkled Kosher salt to draw out the water, then removed the salt when I patted them dry to keep the sodium down. I used the sauce as a marinade while my veggies were cooking, (steamed in oven in parchment paper for about 20 mins. The eggplant soaked up the sauce and I brushed them again when I flipped them over to grill the other side. The parmesan cheese adds a great flavor melted on top. My son doesn't like eggplant... but he ate 3 of these steaks.

This was awful. I don't know if I just had a bad eggplant or made a mistake or what but this was just plain gross. One bite and the whole family tossed it in the trash. A waste of some good Parmesan.

THis was delicious, I din't have apple cider vinegar so I used champagne vinegar that I had on hand for another recipe. It does taste better with male eggplant, and these eggplant were straight from a farmer's market - picked fresh the same day. BUt the recipe was easy to follow and wonderful. I eat eggplant all the time, and have won blue ribbons with my recipes so I don't believe I am doing anything wrong when I prepare this. Remember to take your time when cooking. Cooks who rush often have mediocre results. (I speak from experience!

I could not stomach this recipe it was just bad...I tried grilling it to add/change flavor and it was still bad. Not one for the books!!

The sauce tastes pretty good, but the eggplant had an unpleasant taste (yes, I purged it. Maybe it was too late in the season, or maybe it was because the eggplant I used was female, when AB recommends male ones in the show (I didn't remember that part while shopping. Maybe that would have made a difference, or maybe it wouldn't.
I might try this one more time with smaller eggplants earlier in the season. Or maybe not.

Normally Alton Brown gives great recipes but this one is just horrible. I tried it many times but it always left a bad taste in my mouth. I love eggplant but I did not love this. There is an Islamic proverb that says that "A woman who does not know how to prepare eggplant 101 different ways is not yet prepared for marriage." and I believe that Alton has to do another eggplant show because this one just didn't cut it.

I liked it alot. A little salty for my taste as is. That's easy to remedy though. The given cook times weren't accurate for my oven. Again, easily remedied. I put extra parmesan on the top and broiled it as if I was making Parmesan crisps. It gave it a very good crunch on the top.
