For me Alton is such an authority, but I would like to share with you all my own recipe. I owned a restaurant and this is what we did. I hope Alton gives this a try and give me his opinion, I loved his recipe.
1 Pound of Flour, 2 ounces of Lard, 1-1/4 teaspoon of baking powder, 1-1/2 teaspoon of salt, 1 tablespoon of table sugar, 1 cup of liquid, this could be water or milk. I place all dry ingredients in food processor and then the liquid.
I Kneed until I feel soft and silky look, then I wrap it and the rest is the same as Alton. If you want to use another type of oil, you can, just keep the same amount. Sometimes I use Whole wheat flour.
I hope you enjoy, and if Alton does, it will also be an honor.

I used vegetable shortening instead of lard, and they came out perfect. The dough was a little stickier than I thought it should be, but after some kneading and rolling it came out well. Tasted really good!! Way better than store bought. Now if only I could successfully roll them into circles!

they came out VERY well. i didn't have lard so i used shortening and no problems. i also left it in the fridge for a few days because i didn't have time to make it just then. they were fine, soft, thin and very tasty. now i don't have to buy tortillas from the store anymore. Alton Brown is the GREATEST.

Perfect. Don't skip the one hour rest! The texture of the dough completely transformed during that one hour. For those of you without a scale, the average weight of a cup of flour is 4.5 ounces, so 2 cups for this recipe, but it will never be as precise.

This recipe was easy and the tortillas were fantastic. Using a scale to measure the flour gave these tortillas the perfect texture and using the food processor made it all very easy and much less time consuming than my grandmother's traditional way. I will never need another recipe. Fabulous!

I gave 5 stars because I think Alton is a smart guy and good cook. But here's my complaint. I do not have a scale to weigh my flour. Couldn't you just tell me the recipe using cups?

I use this recipe anytime I want tortillas - the only problem is I never have any 'leftovers'! The other problem is that anytime I make them the kids come running and beg me for tortilla dough to play with and nibble on! Fantastic and perfect recipe that is super easy to make!

I just made these flour tortillas and did this ever "WOW' my family I followed the recipe exactly and I am completely satisfied with the results. Anyone who needs a quck tortilla please try this recipe you won't be disappointed. Thank You Alton for a easy quick recipe.

The recipe is very easy! We used Crisco shortening as we didn't have lard. The tortillas are delicious and were perfect for our shrimp tacos. Almost as good as Mom's!
