Just like most of the others, I changed the vegies to what I had on hand and this is a great, basic recipe. Dinner was on the table in 15 minutes. My 5 year old loved it!

More of a method than a recipe, as I've made this numerous times with all sorts of different ingredients. Not only is it an easy, pull-together sort of meal that can make use of all sorts of left-overs and odds and ends in the fridge - it's also very elegant, an attractive dish I'd consider serving for brunch guests. The magic is in the broiling - it comes out so gorgeously golden brown! Our favourite so far is a mix of ham, sweet pepper (yellow, orange and red are pretty and cauliflower - the last of which we find goes great with the cheese!

I used leftover Honeybaked ham and oven roasted asparagus. Also added half of a leftover baked potato, diced. For the eggs I substituted Eggbeaters. Fabulous! I think you could add just about anything and it would be great.

I have a ton of eggs left over from my parents visit and I wanted a frittata recipe for supper. I had no asparagus, so I sauteed some onions and wilted some spinach instead. I also used turkey bacon as a healthy alternative to the ham. Finally, I sprinkled a little shredded cheese on top on the last minute of broiling. Everyone, from my 6 year old to my husband loved it. I will absolutely make it again.

The only reason I did'nt give this 5-stars is because I deviated from the recipe and used what I had on hand. Although the frittata was wonderful I am sure it will be much better when I follow the recipe a bit closer. And trust me I will make this one over and over. You are a stud A.B.

I've used this recipe again and again. Especially when I have friends over, I can just whip them out. The ingredients can be changed up as needed to use whatever you have around - tomatoes, artichoke hearts, etc..

I used my leftover thanksgiving turkey with this and some veggies I had on hand. I also cut the recipe in half, still a bit much for just me but it was great and a great way to use turkey.
