One of my favorite ways to eat more veggies. I've passed it on to several others including my good friend who eats almost nothing that is good for her! Thanks

I found this recipe bland . I kicked it up with 1 tbsp of Better Than Bouillon chicken bouillon . 2 tbsp of Vegetta . 1 bulb roasted garlic . green tops only from 2 bunches green onions . 1 15.5 ounce can of cannelloni beans . 2 tsp kosher salt . I added the beans for protein , not flavor . Try it my way and you will have a recipe to hand down to the grand kids . Hey Alton , try my kicked up version , you'll like it . The Reaper !

I fixed this for my mother-in-law who broke her ankle and her husband. I figured it would last them a week or more. They ate it all up within a few days and wanted more!

Thick and tasty this soup makes a great meal. Make loads when the produce is fresh in the late summer and freeze it to enjoy as a quick meal on cool evenings.

I have made this incredible vegetable soup at least 4-5 times now and each time I can't believe how great it is. Anyone that we have shared it with just raves about it as well and wants the recipe. My husband always asks me to make it for him, and he just recently made it. It is a lot of preparation with the veges, but well worth the time. We also add the spice Herbes de Provence for a really great taste and sometimes zucchini or yellow summer squash. Yum! Yum!
