    This was my first gazpacho. I could not wait to dive in, after I made this! It is much better the second day, when the flavors have time to marry. I omitted the basil and added extra lime and cilantro! This is a great recipe. Very filling and refreshing.

    Tried a lot of recipes over the years but this one is just perfect. Be sure you double the recipe as it won't last long!

    This was the first time of ever making a Gazpacho!! Everyone at my dinner party LOVED it!!! Full of flavor, I am so glad I made a double batch!!! Absolutely delicious!!!

    Actually, historically it should not have bread in it so this recipe is correct. It should be a "bunch of vegetables." This sounds just like gazpacho you get in spain...yum!

    I believe bread to be an essential ingredient in Gazpacho. Not merely because it seems to historically be a primary one. But because the soup needs the binding properties imparted by the bread to be soup rather than just a bunch of chopped vegetables.

    Tried many recipes for gazpacho including all on foodnetwork looking for the authentic taste found in places like Puerto Rico. Finally can throw all others out as this is the real thing! Unlike others that had off orange color, funny taste, too much liquid or too little plus needed time to blend... This one tastes great from the get go! Had it for lunch and felt like being on the island of Puerto Rico. Thanks for a great way to start the New Year!
