    This is a good healthy and tasty recipe. I served this with some toasted french bread rubbed with garlic with a little cheese melted on.

    I went by the recipe on the show where it said to add 1 cup of tomato juice. I think this was a little much and may cut that back next time.

    I've made it as is and I've omitted the basil and added boiled shrimp and avocado. Really delicious summer meal.

    I didn't have tomato juice, so I used regular V-8 and I omitted the olive oil to make this Weight Watcher friendly. PERFECT for a hot summer day.

    This is the most amazing soup! The only thing I would do differently would be to reduce the amount of oil. I just felt it didn't need quite as much as the recipe called for. Other than that it was great! Make a double batch for sure...you'll need it!

    This was my first gazpacho. I could not wait to dive in, after I made this! It is much better the second day, when the flavors have time to marry. I omitted the basil and added extra lime and cilantro! This is a great recipe. Very filling and refreshing.

    Tried a lot of recipes over the years but this one is just perfect. Be sure you double the recipe as it won't last long!

    This was the first time of ever making a Gazpacho!! Everyone at my dinner party LOVED it!!! Full of flavor, I am so glad I made a double batch!!! Absolutely delicious!!!
