I've labeled these "dangerous" because portion control has to be strong. They are soo good, I can't stay out of them! I won't buy another "flavored" can of almonds again. These are so easy to make and faster than going and buying a can. Just keep a couple of pound packages in your freezer and you're set for anytime.

Make these for cocktail parties or any get-together.

    Thank you Alton!

These are fantastic! It's such a pleasure to find spicy, savory almonds. These are a wonderful snack throughout the day and much healthier than chips or popcorn to munch on during a movie. I especially love the kick they have from the chile (I had hot red ones so used that instead of the ancho. Finally, they're really easy to make. Yum!

These Almonds were Awesome!! and in general are key to my eating regimen. I too since Thanks Giving have switched to a Mediterranean diet, Like you Alton I wanted to increase my Health and gain energy. I used to watch Food Network ALL THE TIME. I was afraid that I would never watch it again.
I am so happy that Alton is/may show how he did it and there by showing his new recipes.
Nice to see that at least one show that I will watch, hopefully there will be more episode related to your weight loss and CLEAN EATING
except for the salt (sub'd kelp granules it is what i am already eating. Like I said it is a Combo of the MEDITERRANEAN and EAT CLEAN Diet. My wife also lost 30 lbs. in that period

Love this recipe! I just made a batch this morning and they are delicious. Salty, savory, with a little kick. The flavors are not overpowering. I also split them up into 1-ounce portions - 174 cals per serving for 16 servings. One last tip: be careful not to inhale too deeply when trying to discern if your chile pepper is giving off a good "aroma" yet - I breathed in BIG and couldn't stop coughing for 15 minutes! Happened again after I tossed with the ground ginger, haha. Cooking them in the oven definitely mellows that aroma though, so no worries about having a coughing fit while eating these almonds... ;-]

Delicious savory snack! Definitely good for those of us with a salty tooth : Doesn't mention it here, but I like Alton's tip of packing these off in 1 oz portions to curb overindulging.

I love making a batch of these before a plane flight! They're salty and delicious and I'm full after just a few so I don't feel weighed down, which is wonderful when traveling. One minor change, instead of the arbol chile I use a teaspoon of red pepper flakes to taste. Kudos Alton, you're the best!

these are delicious and when i found out they could help you lose weight i was ecstatic! to get the full diet benefit i chopped these up and added them to a mixture of arugula and other greens and carrots with a white balsamic dressing. this way i could eat three of the things on his diet list that you have to eat daily: carrots, leafy greens, and nuts!
