    I've been making these for about 6 months now, almost weekly. I have used Season Salt twice instead of Sea Salt, and this last week, I used Cumin instead of Ginger. Will try some liquid smoke as one other reviewer recommends, might be a nice addition!

    We divvy out 2 ounces per bag per person per day, they are GREAT! Only bad thing is DH takes 5 bags for work and I wind up with 3 (I only make 1 pound at a time. We love getting the fresh almonds at our local Farmer's Market, we know where they are sourced from, and they are unpastuerized.

    I really thought I would love these, but didn't. We eat almonds every day, just buy them raw and toast in the oven for a few minutes. We didn't care for the softer texture (mine didn't crisp up, even the next day and really prefer to taste the pure flavor of almonds. I thought they were salty and just not great. I usually love everything Alton makes, so we are going to try the sardine sandwich soon!

    My American SO and I love to watch Alton over here in the UK, and I wanted to say that this was very much a success! I couldn't taste the ginger as much as I expected, but I think that's good - it's more of a subtle background flavour. What I also like about this recipe is that it encourages you to think of variations - I would never normally think about roasting my own flavoured nuts and would tend to buy them ready-made. However, making these nuts, my mind was a-whirl with what different flavour combinations would be good. A smoky chipotle, a spicy chilli - I would even love to make a sweet version, maybe with honey. A fantastic recipe!

    I made the recipe twice. Once as Alton did, but the second batch came out better.

    Reduce the ginger to about 3/4 T
    Add 1/4 T of smoked paprika
    Add 1 tspn of liquid smoke

    Yum!

    I was a little worried about the sesame oil being too overpowering but everything balances out nicely They are GREAT.
