    I made this a couple years ago for my meat only eating father and two older brothers; being the only one who eats veggies, I wanted to have a main course that we ALL could enjoy. Not eluding that this wasn't the traditional meatloaf, I served it up to them & they LOVED it. Since then I have not been able to get out of the kitchen & they willing eat their vegetables now with every meal. ^_^

    I absolutely love the "skilled cooks" with the "speed" cook oven - LOL. Yea. Anyway I didn't appreciate the flavor - too "tex mex" for my taste and I'm not fond of carrots. But everyone else liked it.

    I find the negative feed back interesting.
    If you can't use a knife (really, it took you ALL DAY to chop 1/2 an onion, one carrot and some garlic? - get help quick and stay out of the kitchen please, do not like cumin, or plan on making this for kids (hot sauce duh... Find something else to make. Kind of common sense.
    Aside from that, every easy, very quick, and very tasty indeed.

    Delicious! I used celery instead of carrots. Nect time I will use both probably. Also I'll probably only use 2 cloves of garlic. Best meatloaf I can remember having ever!

    I can not imagine anyone not thinking that this is one of the best meatloaf recipes around. The veggies make it moist as well as adding to it's flavor. The glaze adds to the whole. We ran out of ketchup so substituted masterpiece barbeque sauce and a little chipolatas in adobe sauce. The original glaze sounded really good. My thoughts are if you made this and did not like it you did something really wrong when following the directions like leaving out salt, or you just hate cumin. Use good croutons and be careful of the salt.

    Awesome recipe and I have made many meatloaf recipes...best ever.. 5 stars. Loved the cayenne, gave it some kick! Have made 4 times in the last 2 months..my family loves it!!

    This is the meatloaf recipe that made me fall in love with meatloaf. So tasty! Mind you, in time I have made some changes to it. I put less cayenne in it as I don't like my food as spicy as AB does. I make a different sauce ( 4 T maple syrup, 1/2 C ketchup, 2 T apple cider vinegar and 1 T mustard powder. I also often just use ground beef. YUM!

    It was the most delicious meatloaf I've had great flavors and texture ! It was a big hit with the kids as well !

    I prepared this for my wife and I, and I have to say that it's really tasty! The addition of the pepper gives it just enough heat as to not spoil the rest of the tastes in it. I would prepare this again!
