Simple - loved it! Used garlic bread crumbs instead of croutons and a little more hot sauce than suggested. Fantastic!

My wife does not like meatloaf but she loved this one. Plus she has asked me to make it again. Must be a winner.

This recipe is awesome and pretty quick to make. I made it again last night and used half buffalo and half ground beef (91%.

We usually take about half a cup of V8 and cook it down a little as a substitute for the catsup in the glaze. Makes a bit more of a savory sauce -- and a more South Beach friendly rendition of the recipe. (We also substitute two or three slices of high-fiber 100% whole wheat bread for the garlic croutons -- there is plenty of garlic and fat in the recipe without the croutons! Of course, if you make it verbatim true to the recipe it is still excellent!!

Try it with rice pilaf and a green salad.

This meat loaf is the moistest I've ever eaten. I had two requirements when making my first meat loaf: I didn't want it to taste like a big hamburger brick, and it had to be moist. This recipe wins on both counts.

This is a great recipe. I loved the ground veggies, what a great way to sneak in some nutrition and moisture to a recipe at the same time! This is a spicy recipe. We loved it, but the timid could just scale down the spice and still have a great recipe. I used a "meatloaf" pack from the supermarket that contained veal and pork and it came out great. Try this recipe!

Loved this. Modified it a bit. Didn't grind my own meat. Didn't have honey, so used raw sugar instead. Will use honey next time. Going to make again this week.
