    I used to hate meat loaf, mostly because of the grease. Molding it and then baking on a sheet really helps. But the flavor of this is soooo good. The kids love it. (4 and 6 They even asked me to make it tonight. It has become a family favorite, including the in-laws! Special enough to make for company.

    ...but his one is excellent. Not dry or boring. I like the Mexican flare to the sauce. I just cook mine for 60-65 min in a loaf pan and it turns out good. Also try and substitute a tbs of mustard for the Worcestershire sauce. It's really good.

    Best meatloaf my family has ever eaten. I make it all the time. I serve it as a "cheeseburger" to my 5- year-old and he recently told me that "this cheeseburger was the tastiest."

    I have never tasted meatloaf prepared so perfectly. The vegetables give it a retro feel, while the spices bring it into the 21st Century. It's like Mrs. Cleaver in red-hot shoes. Wow! And the glaze . . . droooooooool.

    Wonderful meatloaf. I used bread crumbs instead of croutons, because that's what I had, and it was fabulous. Best meat loaf ever! Loved the glaze!

    No uneaten leftovers with this recipe. It was wonderful! My husband loves food a little spicey and this was no exception. He normally hates my meatloaf, but he loved it this time.

    I left out the carrots and bell peppers, and I used Italian breadcrumbs rather than croutons. I loved the mix of meats and pureeing the onion instead of chopping it makes the meat loaf much more flavorful overall. Turning it out onto a parchment paper made all the difference in the world. My husband said this meatloaf was better than the one HE usually makes -- very high praise!

    I hated meatloaf until I tried this recipe. It is suberb, and relatively easy to make. To me, there just isn't any other meatloaf that can compare! YUM!!

    My son has some sort of weird aversion to leftovers--won't touch 'em. Even if he himself cooked it, if it spent the night in the fridge, he won't go near it. There's only 3 of us and I don't eat meat, so this big meatloaf was meant to be devoured by just my husband and my son. Well, the next day, my son was actually HEATING UP LEFTOVER MEATLOAF! That's the biggest endorsement any recipe can get, as far as I'm concerned.
