Perfect once again this year! Two years running with this fantastic recipe.
We cooked a 12lb fresh butterball turkey
Convection roast - Viking oven
Cooking time was approx. 10 minutes per lb.
Reduced initial 30 minutes at 500 to 20 minutes, because of smaller sized bird and convection heat
Removed at 161 and let rest until turkey reached between 165 - 170
Absolutely moist and delicious on the inside and crispy on the outside
A blessing to eat!
I remember my parents cooking turkey for hours and hours! This turkey recipe cooks things much more quickly.
Thanks Alton!!! Will make again next holiday season.

I love to cook and have been doing turkeys on the grill for years while the wife does the roasting. Just during the past year have I started experimenting with brine. This is by far the best brine I have ever tried. Best turkey ever.
Note: We did 2 small 12 pound turkeys. One on the grill and one in the oven. Both took a little longer than usual. I am assuming that the brine adds to cooking time.

This recipe is awesome! I have used it for three years now. The brining produces the most perfectly seasoned and moist turkey. The oil rub and roasting for the first 30 minutes at 500 degrees produces perfectly browned and crispy skin.

OHH...MY....GOSH! Absolutely by far the juiciest turkey I've ever made! All the reviews are spot on! Wonderful flavor! Very easy and I did NOT have an issue with the oven smoking up the kitchen while roasting at 500 degrees for 30 minutes. It gave the turkey a BEAUTIFUL golden brown skin! The brine was enough for our 18lb. turkey. Also made Tyler Florence's Easy Turkey Gravy.......fabulous!

This recipe made for a very beautiful turkey. From all of the raves I expected more flavor and moistness but it didn't seem extraordinary. Still, everything went according to plan. The turkey tasted good.

WOW! Truly delicious... I'm not one to usually go out of my way and post a review but the recipe to this turkey with family and friends on Thanksgiving was an absolute hit. Everyone said it was the JUICIEST bird they've ever tasted. It was my first time preparing a Thanksgiving dinner and it certainly wont be the last. I know next year I will be the designated house : There was nothing left but bones, not a scrap of meat.
I also took some of the made gravy using some some of the juices that ran off into my turkey pan. Absolutely delectable! Would recommend this recipe to everyone. Best Turkey Mr.Alton Brown
