This turkey had tons of flavor, and it was surprisingly easy to prepare. Not only did it taste good, but it looked beautiful. Everyone wanted a picture of it before we carved it. It looked picture perfect, and it tasted great too.

This was my first turkey and I also over cooked it :o

My first time to cook a turkey and this recipe made it a winner. I'll be the turkey cooker in my family from now on.

Ok, I thought my house was going to burn down that first 30min., but after that all I can say is AMAZING!The brine process was flawless, and the aromatics made the turkey devine.Good Call on the thermometer too! I also added 1 Orange, and 1 Lemon to my aromatics(from Giada de L. recipe.. I had a 24lb. turkey and not one drop was left! Thank-you!!!

I've been using Alton's recipe for several years and this year it hit beyond all expectations. The main variation I use is the fact that I BBQ the bird on a gas weber. Frees up the double oven and minmizes the mess. The only problem is often the bird is a bit too tall to fit. Our family solution is that I set it on the groud in a bag and lightly jump on it to flatten it a bit : Always good for a laugh.

The bird this year was simply amazing. The white meat was incredibly juicy. I'm a dark meat lover and went for a second helping of white meat. Even after two days in the frig it's still juicy.

I'd highly recommend this recipe to EVERYONE. Well worth the little bit of extra effort.

I've used brining techniques in the past with reasonable success. This recipe (followed to the "T" helped create the best roast turkey ever put on our table!! The orignal show has some subtle techniques not mentioned in the text recipe so this episode is well worth owning the video. Thanks!

Thank you Alton for the best ever turkey. I have NEVER experienced the crowning glory of a beautifully roasted bird for my holiday table until I tried your Good Eats Roast Turkey.

My 19lb. turkey was so flavorful, moist, and tender. As a humble cook, I almost had to pinch myself while listening to all the genuine appreciation around the room.

    Sincerely,
    Mrs. Nina Gonzales

This produced the moistest turkey I have ever made. For years, I have used a turkey bag to cook my turkey. As a big fan of Alton's, I decided to try his method. I cannot say enough good things about this turkey.

I was unconvinced about the crystallized ginger, allspice berries and cinnamon stick as I thought it would impart too much flavor, but I was faithful to the recipe. I was wrong. I will continue to use this recipe - everyone in the family thought I was nuts, but are now also converts.

Again - very good and moist turkey.

Excellent recipe and instructions. I've never cooked a turkey before and everyone said it was the juiciest turkey ever and perfectly cooked. Heat searing created a perfect brown color. Guests were happy to not be eating another bagged turkey.
