This is the only way I will consider making a turkey. It smells delicious and tastes even better. It has become my definition of Thanksgiving!

Alton Brown is the greatest. I love his show.

I had always been afraid to brine anything, but Alton Brown made it not so frightening. And....Ohhhhhhh, the turkey was soooooooo good. My husband thought it was fantastic, too.

    Thanks Alton.

Even if you overcook this turkey; it will still be tender, delicious and incredibly juicy. Some real-world examples: everyone showed up late to Thanksgiving dinner, over an hour and a half late. The turkey which had been cooked, then placed in a cooler, wrapped in layers of foil and towels with a probe thermometer to monitor danger levels (temperature never dropped below 160 sat for this long at the previous mentioned temperature. It still looked like a butterball commercial when sliced.
Microwave turkey sammiches the next day; still juicy, still mouth watering.
Ever since initially trying this recipe I have never skipped the step of brining the turkey. Even when cooked in the smoker this boosts flavor and fool-proofs the turkey against overcooking.
Alton Brown is a food genius.

I have cooked this turkey the last two Thanksgivings and by far it's the way to go. My in-laws called me and asked if I would do this turkey again this year for their house. It's all worth the time and effort when you taste this melt in your mouth turkey!

I frequent websites like Epicurious.com and allrecipes.com...and I like to usually add my own twists. Don't usually give out high marks to a recipe -- but this recipe was amazing! The turkey was moist, flavorful and best of all, so easy, demanding minimal attention. I loved not having to baste, flip, or rotate the bird. I followed the recipe closely...just subbed bay leaves for juniper berries and went heavier on the rosemary/sage. I resisted the instinct to stuff herbs under the skim and use butter or a glaze on the outside. I roasted a 21 lb turkey and just added an extra 1/4 to the proportions. Turned out great and will definitely make again.

I have made this recipe twice with rave reviews from everyone about how moist and flavorful the turkey was. I don't think I will ever go back to simply baking a turkey again.

I wowed my huge family with this delicious turkey recipe. I made it with ease and served it with pride. Alton's was my first and last turkey recipe. It could't get any tastier than this!

I have been making this turkey recipe since I first saw it on Food Network a few years ago. It is by far, bar none, the BEST turkey I have ever made. It is SO moist. Everyone raves how good it is. I have shared this recipe many times. It is so easy I call it "Turkey for Dummies". You won't be disappointed. The hardest part is finding a container to brine it in.

The only way to do a turkey! Just watch out for the smoke from the oil! I have never had one complaint about the turkeys I've done this way and I have been doing it ever since the show aired.

Turned out perfect, right down to the timing, but I would let it sit for 30 min. before carving next time. The leftovers made the best Turkey Soup the next day.
